Microbial Population Studies; Challenge studies in foods; Predictive Microbiology.
Research topics include:
• Combined effects of water activity and chilling on E. coli survival (Meat and Livestock Australia)
• Efficacy of salts of organic acids on growth of L. monocytogenes in ready-to-eat foods
• Listeria monocytogenes in fresh cut salad vegetables
