Sandra has more than 20 years experience as an Accredited Practicing Dietitian (APD) and continues to practice in a variety of work settings in Tasmania including working in a consultative capacity on a number of community nutrition, corporate health and food industry projects.


Career Summary

Sandra has previously worked in industry for 12 years as a corporate dietitian, including food, complementary medicine and nutraceutical industries, with her responsibilities ranging from food regulation (claims substantiation), business planning, product development, nutrition marketing through to health professional education.


Research Interests

Sandra's research interests are broad include the following:

  • Public health nutrition (ie chronic conditions management, food security and food supply) and addressing the challenges of climate change and the impact that our food choices have on the environment. She also participates in The Climate Project – Australia, Asia Pacific Summit (A-P Summit) in Melbourne where she recently had the opportunity to be trained by the former US vice president Al Gore to deliver a version of the slide show from the documentary An Inconvenient Truth. Sandra is also a member of Transition Tasmania which is a network of Tasmanian communities making the transition to a low carbon, resilient future.
  • Sports nutrition and the impact of nutrition on human performance. She recently worked with the Australian Defence Department to develop a food frequency questionnaire for land-based Australian Defence Force Operations.

Teaching

Sandra has been teaching nutrition and food science at the University level since 2004, in a number of university settings throughout Australia, and takes a learner-centred approach to her teaching. She is presently the unit coordinator for CXA214 Food Sciences and Practices, CXA100 Food Studies and CXA309 Health Systems and Health Informatics. She also teaches in a number of other units throughout the academic year.

Sandra’s present school responsibilities include research, teaching and unit coordination 2.5 days each week.
